White Chicken Chili### Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Fresh cilantro, for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Add the chicken breasts to the pot and pour in the chicken broth. Bring to a simmer and cook for 15-20 minutes, until the chicken is cooked through. Remove the chicken from the pot and shred it using two forks.
  3. Return the shredded chicken to the pot along with the white beans, diced green chiles, cumin, chili powder, and oregano. Stir to combine.
  4. Let the chili simmer on low heat for an additional 10-15 minutes, allowing the flavors to meld. Taste and season with salt and pepper as desired.
  5. Just before serving, stir in the shredded cheese until melted and well incorporated.
  6. Serve hot, garnished with fresh cilantro and additional cheese if desired. Enjoy your comforting bowl of white chicken chili!
